Al fresco Italian in the Walled Garden, vibrant, healthy twists on club classics in the Sun Pavilion, live performances and cosy cabanas in the Spanish Garden and late-night revelry in our den of decadence, the Biba Bar. THE ROLE
We are looking for a Chef de Partie to join the prep kitchen at The Roof Gardens. As a key member of our kitchen team, you will be busy supporting the operation to ensure a truly brilliant experience for our members when they dine with us.

You’ll need to be quick-acting, quick-thinking, responsive, and calm under pressure as you work in a busy team to execute preparation, cooking and delivery of your dishes to the very highest standards.

 

Your main responsibilities will include:

Operation and Service

  • Help to ensure the smooth-running of your section, by working closely with the team.
  • Prepare ingredients, keep your section organised, clean, hygienic, and running smoothly.
  • Cook and present high quality dishes from your section, sometimes under considerable time pressure.
  • Where needed assist the Sous Chef in creating menu items, recipes and developing dishes.
  • Manage and train any Commis /junior Chefs, delegating tasks and supporting them in their development.
  • Improve your food preparation methods based on feedback.
  • Monitor portion and waste control.
  • Stock take and order supplies for your station as directed.
  • Train and mentor junior kitchen staff with support from CDP/Sous Chef.
  • Carry out any other duties reasonably requested by a member of the Kitchen/Management Team.

Compliance

  • Ensure cleanliness of kitchen and all associated equipment with high levels of health and safety standards.
  • Ensure compliance with food safety, hygiene standards, Company policies and procedures and assist with maintaining all necessary documentation to ensure adherence to regulation.
  • Ensuring health and safety procedures are always followed.

The skills and experience which will help you succeed in this role

  • Proven experience in a similar level role or equivalent relevant ideally with experience in a similar luxury lifestyle F&B environment
  • Level 2 Food safety and Level 2 Health and Safety in the Workplace Award
  • Awareness of manual handling techniques and Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety
  • Experience of kitchen equipment and excellent knowledge of all sections
  • Ability to produce excellent high-quality food with a high level of attention to detail.
  • Strong communication and interpersonal skills
  • Competent level of English spoken and written and a good level of numeracy
  • Strong organisational skills, with the ability to manage multiple tasks simultaneously
  • Ability to work effectively as part of a team, unsupervised and deliver quality work
  • Enthusiasm to develop your own skills and knowledge plus those around you
  • Positive and approachable manner
  • Passion for championing diversity, equality, equity and inclusion
  • Ability to work flexible hours, including evenings and weekends.
