Sabor are seeking a Back of House Manager to join their team. The successful candidate will be friendly, personable and passionate about all things food and drink. This is a fantastic opportunity for an experienced Back of House Manager looking for a new role in an award winning, critically acclaimed group.

Founded by Nieves Barragan and José Etura, Sabor (meaning flavour in Spanish) takes you on a journey from the tapas bars of Andalucía, through to the asadors of Castile and the seafood restaurants of Galicia. Sabor focuses on capturing the flavour of Spain as well as showcasing the use of traditional ingredients and cooking methods, and a relaxed approach to dining.

The quality of the produce our kitchen enjoys is unparalleled. Upstairs in the Asador, whole suckling pigs are cooked in the wood-fired oven, and octopus are simmered in giant copper pots.

Downstairs in the restaurant, a seafood counter sits next to dining bar, where guests can oversee the kitchen in full service. Sabor was awarded a coveted Michelin Star in 2018.

The Position

Reporting to the Executive Chef, the Back of House Manager will oversee all operational aspects of the kitchen environment while maintaining exceptional standards of quality, efficiency, and food safety. You will be responsible for inventory management, coordinating stock audits, processing orders, and supporting staff scheduling. This role requires strong leadership skills to manage health and safety compliance, COSHH regulations, and HACCP implementation.

Key Responsibilities

  • Manage comprehensive inventory control systems and conduct regular stock audits.
  • Oversee ordering processes ensuring optimal stock levels while minimizing waste.
  • Assist with creating and maintaining staff rotas to ensure appropriate coverage.
  • Develop and implement cleaning schedules across all back of house areas.
  • Responsible for health and safety standards, COSHH regulations, and HACCP protocols
  • Support menu development with insight on ingredient availability and seasonality.
  • Supervise the BOH team ensuring high-quality food preparation and presentation.
  • Monitor and control budgets, identifying cost-saving opportunities without compromising quality.

Requirements

  • Previous experience as a BOH Manager or a Senior Chef looking for a change of scenery.
  • Experience within a takeaway only kitchen advantageous.
  • Strong awareness of trends and seasonality of produce.
  • Proven ability to manage, train and motivate a Kitchen brigade.
  • Experience in scheduling and reviewing staff rotas.
  • A working knowledge of health and safety, compliance and procedures.

Additional Qualifications

  • Inventory management software experience.
  • Strong analytical skills for budget management and cost control.
  • Ability to work effectively under pressure in a fast-paced environment.
  • Excellent communication and interpersonal skills.
