Speedboat Bar draws inspiration from Bangkok's Chinatown and the thrilling sport of speedboat racing along Thailand's canals. This exciting venue showcases masterful wok-fired cooking, Thai-style salads, and spicy sauces that highlight specialist Thai herbs and ingredients cultivated at Chef Luke's own Ryewater nursery in Dorset. Our distinctive bar program features Singha beer towers, signature cocktails like the Snakeblood Negroni and Jelly Bia made with frozen Singha Lager, alongside refreshing non-alcoholic options.

Plaza Khao Gaeng, our Southern Thai restaurant located in Arcade Food Hall, celebrates the rich "coast to jungle" cuisine of the region. "Khao gaeng" (curry over rice) is at the heart of our offering – a kaleidoscope of curries thick with fresh coconut milk, aromatic curry pastes, and fermented fish, complemented by searingly hot stir-fries and cooling herbs. The restaurant's ambiance is inspired by a beloved Bangkok establishment housed in an old movie theater, providing guests with a cool, quiet respite from the bustling world outside.

The position

As Beverage Manager, you will be responsible for overseeing the daily beverage operations across Plaza Khao Gaeng & Speedboat Bar and some exciting new projects and openings within the Chaiyo group .

The role requires a blend of leadership skills, attention to detail and quality, excellent guest service, a smart approach to business finances, and a humble and hands-on approach in order to drive the business forward.

Previous experience managing a high-volume, quality bar or restaurant at Senior Bar manager level or above.

Key Responsibilities:

• Oversee and manage beverage operations across 2 bar locations and new projects and openings.
• Lead and motivate a small bar team across the Chaiyo restaurant group, ensuring consistent and exceptional service
• Manage and maintain appropriate stock levels, ensure timely ordering, and oversee efficient inventory management
• Ensure compliance with licensing laws, health and safety regulations, hygiene standards, and maintain a safe environment for staff
• Collaborate with the culinary team to create food and beverage pairings that enhance the overall dining experience
• Stay informed about industry trends and developments, actively seeking opportunities for improvement
• Expectation to run shifts on the floor, taking charge of the operation
• Deliver regular, relevant wine and cocktail training sessions for the teams
• Keep wine lists up to date and factually correct – both digitally and physically
• Ensure the cellar and beverage store is fully stocked, clean, and that vintages are checked regularly.

• Strong leadership and management skills, with the ability to inspire and motivate the team
• Excellent communication and interpersonal skills, with a customer-focused approach
• Ability to multitask and thrive in a fast-paced environment
• Familiarity with inventory management software and POS systems
• Ability to train the team and develop supplier material for wine/spirits education
