From the founders of the Michelin-starred Sabor, Chef Nieves Barragán Mohacho, in partnership with JKS Restaurants, is seeking a passionate and talented Bar Manager to be part of Legado—a brand-new Spanish restaurant opening this summer in Shoreditch.

The Restaurant

Legado, meaning ‘legacy’ in Spanish will showcase the depth and diversity of Spanish food. With over two decades of experience leading Spanish cuisine in London, Chef Nieves is bringing her vision to life at Legado, a celebration of Spain’s regional culinary heritage.

Legado will open summer 2025 in Montacute Yards, just off Shoreditch High Street.

 

The position

The Successful Bar Manager will have:

  • Previous experience managing a high-volume, quality bar or restaurant
  • Proven experience as a Bar Manager or in a similar role at a high-volume, upscale establishment
  • Passion for Excellence: Your unwavering commitment to excellence in food, beverages, and hospitality is evident in everything you do. You possess a creative approach, an impeccable attention to detail, and an innate desire to deliver exceptional experiences that leave guests in awe
  • Leadership and Flexibility: as Bar Manager, you will be an influential leader, guiding and motivating a team of professionals. Your exceptional interpersonal skills, outgoing personality, and adaptability to a dynamic and fast-paced environment will foster collaboration and create a positive work atmosphere

Key Responsibilities:

  • Oversee and manage beverage operations
  • Lead and motivate a small bar team, ensuring consistent and exceptional service to guests
  • Manage and maintain appropriate stock levels, ensure timely ordering, and oversee efficient inventory management monthly
  • Ensure compliance with licensing laws, health and safety regulations, hygiene standards, and maintain a safe environment for staff
  • Collaborate with the culinary and drinks team to create food and beverage pairings that enhance the overall dining experience seasonally 
  • Stay informed about industry trends and developments
  • Maintain and develop excellent knowledge of wine, suppliers, and attend wine tastings along side wine manager
  • Expectation to run shifts on the floor
  • Deliver regular, relevant wine training sessions for the team

Skills & Attributes:

  • Strong leadership and management skills, with the ability to inspire and motivate the team
  • Excellent communication and interpersonal skills, with a customer-focused approach
  • Ability to multitask and thrive in a fast-paced environment
  • Familiarity with inventory management software and POS systems
