Executive Chef

ABOUT THE ROLE
In the role of Executive Chef, your key focus will be to:
- oversee the food production for all food service outlets (revenue and non-revenue generating)
- undertake creative menu planning and ensure that all menus items have recipe costings to deliver target profit margins at designated sale prices
- be responsible for food quality standards across the hotel and works collaboratively with F&B service team to ensure high standards of food presentation at the point of service
- assume ultimate responsibility for the Food Safety Management System for kitchen areas
- undertake kitchen and back of house inspections with the Back of House Manager, risk management and safety colleagues/consultants and City of Westminster officials, as appropriate
- conduct health-check cost ratios (food, labour etc) and projected gross profit margins weekly, to identify warning signs in sufficient time to take remedial action
- manage, direct, train and coach the performance of all kitchen team and through personal example, together with the senior kitchen team, create a professional, fair and supportive working environment.
ABOUT YOU
- previous similar experience of operating at a senior level in a 5* property
- proven track record of a successful F&B operation in a hotel
- proven leadership and motivational skills
- strong organisational skills and creative ability
- good financial acumen
- continued interest to be very operational in the kitchens
- ability to forge positive working relationships across the business and work collaboratively with other teams
- food safety training along with relevant culinary qualifications
